WINE MAKING

Selection of grapes in the vineyard, manual harvesting in 17kg crates. Direct pressing of the grapes then occurs without destemming, in a reductive environment, using dry CO2. Fermentation then takes place, 50% in concrete oval vats and 50% in French oak barrels. Once alcohol fermentation is complete, the volumes are reversed and malolactic fermentation takes place. The wine is then aged for a further 12 months in French oak barrels and concrete eggs. 

TASTING
Pale yellow in colour with a bright sheen. On the nose, there are aromas of almond, banana and tropical fruit, on the pallet it is buttery with a pronounced acidity, making it both fresh and complex
