WINE MAKING
Selection and thinning of bunches of grapes, followed by manual harvesting in 15kg crates. Cold pre-fermentation maceration then takes place for 3 days, followed by further fermentation for 12 days, incorporating 10% pre-selected stems. Prolonged maceration then takes place for 15 days, leaving the wine in contact with the skins. 30% of the wine is then aged in oak barrels and 70% in concrete oval vats for 6 months
TASTING
Clear and bright in colour. The aroma has notes of strawberries and herbs common to the terroir, such as thyme and jarilla. On the palate, it has a subtle and fresh entry with a persistent and elegant mid-palate.
